Here’s a simple and delicious recipe for Easy Indian Masala Prawns Curry



Ingredients:

For the Curry:

  • 1 lb (450g) prawns or shrimp, peeled and deveined
  • 2 tablespoons oil (vegetable or coconut oil)
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped or pureed
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit (optional, adjust spice to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • ½ cup coconut milk or water (optional for a thinner curry)
  • Salt to taste

For Garnish:

  • Fresh cilantro leaves, chopped
  • Squeeze of lemon juice (optional)



Instructions:

1. Marinate the Prawns:

  1. In a bowl, mix the prawns with ½ teaspoon turmeric powder, ½ teaspoon red chili powder, and a pinch of salt.
  2. Set aside for 10-15 minutes while preparing the curry base.

2. Prepare the Curry Base:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds.
  2. Add the chopped onions and sauté until golden brown (about 5-6 minutes).
  3. Stir in the garlic, ginger, and green chilies, cooking for another 1-2 minutes until fragrant.
  4. Add the tomatoes and cook until the mixture turns soft and oil starts to separate (about 7-10 minutes).

3. Add Spices:

  1. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes to enhance the flavors.

4. Cook the Prawns:

  1. Add the marinated prawns to the pan and cook for 3-4 minutes, stirring occasionally.
  2. If using, pour in the coconut milk or water and simmer for another 2-3 minutes until the prawns are fully cooked and the curry thickens slightly.

5. Finish and Serve:

  1. Stir in garam masala and cook for 1 more minute.
  2. Garnish with fresh cilantro and a squeeze of lemon juice for brightness.
