Tex-Mex BBQ Chicken Sandwich Recipe

Ingredients:

For the Chicken:

  • 2 large chicken breasts (or 4 thighs), grilled or pan-seared

  • 1 cup BBQ sauce (smoky or chipotle-style preferred)

  • 1 tbsp taco seasoning (or mix of chili powder, cumin, paprika, garlic powder)

  • 1 tbsp olive oil

  • Salt and pepper to taste

For the Sandwich Build:

  • 4 toasted sandwich buns or brioche rolls

  • 1 cup shredded cheddar or pepper jack cheese

  • ½ cup pickled jalapeños

  • 1 avocado, sliced

  • 1 small red onion, thinly sliced

  • ½ cup cilantro, chopped

  • Optional: chipotle mayo or spicy ranch




Instructions:

  1. Season and Cook Chicken: Rub chicken with taco seasoning, olive oil, salt, and pepper. Grill or sear until cooked through (internal temp: 165°F / 74°C). Shred or slice the chicken.

  2. Sauce It Up: Toss cooked chicken with warm BBQ sauce in a pan. Simmer for 2–3 minutes to let flavors meld.

  3. Toast the Buns: Lightly butter and toast buns in a skillet or oven until golden.

  4. Assemble:

    • Bottom bun

    • Chipotle mayo (optional)

    • BBQ chicken

    • Cheese (melt slightly if preferred)

    • Sliced avocado

    • Red onion

    • Pickled jalapeños

    • Cilantro

    • Top bun

  5. Serve: Pair with fries, sweet potato wedges, or a tangy slaw!
