Here’s a delicious recipe for Spicy Sausage Rigatoni


 

Ingredients:

  • 12 oz (340g) rigatoni pasta
  • 1 lb (450g) spicy Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 (14 oz) can crushed tomatoes
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, plus extra for serving
  • Salt and black pepper to taste
  • Fresh basil leaves, chopped, for garnish



Instructions:

1. Cook the Pasta:

  1. Bring a large pot of salted water to a boil.
  2. Cook the rigatoni according to the package instructions until al dente.
  3. Reserve 1 cup of pasta water, then drain and set aside.

2. Cook the Sausage:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the spicy Italian sausage and cook, breaking it into small pieces, until browned and fully cooked. Remove the sausage from the skillet and set aside.

3. Sauté Aromatics:

  1. In the same skillet, add the chopped onion and sauté until softened, about 3-4 minutes.
  2. Stir in the minced garlic and red pepper flakes, cooking for another 1-2 minutes until fragrant.

4. Make the Sauce:

  1. Add the crushed tomatoes to the skillet, stirring to combine.
  2. Reduce the heat to low, then stir in the heavy cream. Simmer for 5 minutes, allowing the flavors to meld.
  3. Return the cooked sausage to the skillet and stir well.

5. Combine Pasta and Sauce:

  1. Add the cooked rigatoni to the skillet and toss to coat in the sauce.
  2. Stir in the grated Parmesan cheese and mix until the cheese melts into the sauce. If the sauce is too thick, add reserved pasta water, 1 tablespoon at a time, until it reaches your desired consistency.

6. Season and Serve:

  1. Taste and adjust seasoning with salt and black pepper if needed.
  2. Garnish with fresh basil leaves and additional Parmesan cheese.
