Ingredients:
- 12 oz (340g) rigatoni pasta
- 1 lb (450g) spicy Italian sausage, casings removed
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes (adjust to taste)
- 1 (14 oz) can crushed tomatoes
- 1 cup heavy cream
- ½ cup grated Parmesan cheese, plus extra for serving
- Salt and black pepper to taste
- Fresh basil leaves, chopped, for garnish
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the rigatoni according to the package instructions until al dente.
- Reserve 1 cup of pasta water, then drain and set aside.
2. Cook the Sausage:
- In a large skillet, heat olive oil over medium heat.
- Add the spicy Italian sausage and cook, breaking it into small pieces, until browned and fully cooked. Remove the sausage from the skillet and set aside.
