Ingredients:
For the Chicken Marinade:
- 1 ½ lbs boneless chicken thighs or breasts, cut into chunks
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons ground ginger
- 1 tablespoon garlic, minced
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- Salt to taste
For the Sauce:
- 3 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon garam masala
- 1 teaspoon ground turmeric
- 1 teaspoon chili powder (adjust based on spice preference)
- 1 (14 oz) can crushed tomatoes
- 1 cup heavy cream (or coconut cream for a dairy-free option)
- Salt to taste
- 1 teaspoon sugar (optional, to balance acidity)
- Fresh cilantro, for garnish
Instructions:
1. Marinate the Chicken:
- In a bowl, mix together yogurt, lemon juice, minced garlic, ginger, garam masala, cumin, coriander, chili powder, and salt.
- Add the chicken pieces and coat them well. Cover and refrigerate for at least 1 hour, preferably overnight, for maximum flavor.
2. Cook the Chicken:
- In a large pan or skillet, heat 1 tablespoon of butter over medium heat.
- Add the marinated chicken and cook until browned and mostly cooked through, about 6-8 minutes. Remove the chicken from the pan and set it aside.
3. Make the Sauce:
- In the same pan, add the remaining 2 tablespoons of butter.
- Add the chopped onion and sauté for about 5 minutes until softened and golden.
- Stir in garlic, ginger, and all the spices (coriander, cumin, garam masala, turmeric, chili powder) and cook for 1-2 minutes until fragrant.
- Pour in the crushed tomatoes, stir, and let it simmer for 10 minutes until the sauce thickens slightly.
4. Finish the Dish:
- Return the cooked chicken to the pan with the sauce.
- Add the heavy cream (or coconut cream) and stir well to combine. Let it simmer for another 10 minutes, allowing the chicken to absorb the flavors and the sauce to become creamy and rich.
- Taste and adjust seasoning with salt and sugar (optional).
5. Serve:
- Garnish with fresh cilantro leaves.
- Serve hot with basmati rice, naan bread, or a side of vegetables.
