- 4 boneless, skinless chicken breasts

- 1 tablespoon olive oil
- 1 tablespoon butter

- 200g fresh spinach
- 200g mushrooms, sliced
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- 1 tablespoon olive oil
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions:
1. Preparing the Chicken
Season the chicken breasts: Pat the chicken breasts dry with paper towels. Season them generously with salt and pepper on both sides.
Sear the chicken: Heat a large pan over medium heat, adding 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter has melted and starts to bubble, place the chicken breasts in the pan. Cook for about 6-7 minutes on each side or until golden brown and fully cooked (internal temperature should reach 75°C). Remove the chicken from the pan and set aside, keeping it warm.
2. Preparing the Creamy Parmesan Sauce
Sauté the mushrooms: In the same pan, add 1 tablespoon of olive oil and the sliced mushrooms. Cook for about 4-5 minutes until they release their juices and begin to brown.
Add garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Cook the spinach: Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. You may need to do this in batches if your pan is small.
Add chicken broth: Pour in the chicken broth and allow it to simmer for a few minutes to reduce slightly.
3. Combining the Ingredients
Add the cream: Slowly pour in the heavy cream while stirring. Let it cook for 2-3 minutes until the sauce begins to thicken.
Incorporate the Parmesan cheese: Stir in the grated Parmesan cheese and Italian seasoning, allowing it to melt and blend into the sauce. Adjust seasoning with salt and pepper if needed.
Return the chicken: Place the cooked chicken breasts back into the pan, spooning some of the creamy sauce over them. Let everything simmer together for 3-4 minutes to allow the chicken to absorb the flavors.
