Mediterranean Chicken Zucchini Bake Recipe

This Mediterranean Chicken Zucchini Bake is a light yet flavourful dish featuring tender chicken, fresh zucchini, and vibrant Mediterranean ingredients like tomatoes, olives, and herbs. It's a perfect option for a healthy and hearty meal that brings a taste of the Mediterranean to your table.


Ingredients:

For the Chicken and Vegetables:

  • 2 boneless, skinless chicken breasts, cubed
  • 2 medium zucchinis, sliced into thin rounds
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions:

1. Preheat the Oven

  1. Set the oven: Preheat your oven to 190°C (375°F). Grease a large baking dish lightly with olive oil or cooking spray.

2. Prepare the Chicken and Vegetables

  1. Season the chicken: In a large bowl, toss the cubed chicken with salt, pepper, oregano, and basil to coat evenly.
