Ingredients:
For the Chicken and Vegetables:
- 2 boneless, skinless chicken breasts, cubed
- 2 medium zucchinis, sliced into thin rounds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, thinly sliced
- 2 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
For the Cheese Topping:
- ¾ cup crumbled feta cheese
- 1 cup shredded mozzarella or Parmesan cheese
Instructions:
1. Preheat the Oven
- Set the oven: Preheat your oven to 190°C (375°F). Grease a large baking dish lightly with olive oil or cooking spray.
2. Prepare the Chicken and Vegetables
Season the chicken: In a large bowl, toss the cubed chicken with salt, pepper, oregano, and basil to coat evenly.
Layer the vegetables: In the greased baking dish, arrange the sliced zucchini, bell peppers, red onion, garlic, cherry tomatoes, and olives in an even layer.
Add the chicken: Scatter the seasoned chicken cubes over the vegetables.
Drizzle with olive oil: Pour the olive oil over the chicken and vegetables, making sure everything is well coated. Toss gently if needed.
3. Bake the Dish
Bake uncovered: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked and the vegetables are tender.
Add cheese topping: Remove the dish from the oven and sprinkle the feta and mozzarella (or Parmesan) cheese over the chicken and vegetables.
Finish baking: Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.
4. Serve
Garnish: Once the Mediterranean Chicken Zucchini Bake is done, remove it from the oven and let it cool for a few minutes. Garnish with fresh herbs like parsley or basil for extra color and flavor.
Enjoy: Serve warm as a standalone dish or pair it with a side of crusty bread or a fresh green salad for a complete meal.
Chef’s Tips:
- Vegetable variation: Feel free to add or substitute vegetables like eggplant or mushrooms for variety.
- Extra Mediterranean flair: Add a squeeze of lemon juice or sprinkle some fresh lemon zest before serving for added brightness.
